大分県豊後高田市にあるラーメン屋「中華そば山猫」をご紹介します。こちらのお店の前身はミシュランガイド大分にも掲載されたことがあるということで、期待が膨らみます。ベースは中華そばということで、見た目としてはオーソドックスですが、一口食べるとその味に引き込まれます。昆布の出汁に鶏ガラと煮干しの出汁が上手く融和し、上品な味わいとなっており、中華そばというよりも和風テイストなのが際立つスープとなっていました。ちぢれ麺はそのスープと上手くんでいます。九州は濃厚なラーメンが多い中で、この上品な味わいは貴重ですね。食べてみて納得する至極の一杯でした。
